Homemade Marshmallow Fluff/Cream
3 egg whites
3 egg whites
2 cups light corn syrup
1/2 teaspoon salt
2 cups sifted powdered sugar
1 tablespoon pure vanilla extract
In large bowl of an electric mixer, add egg whites, corn syrup, and salt. Using your electric mixer on high speed, mix for approximately 5 minutes or until the mixture is thick and volume has almost doubled.
On low speed, add powdered sugar and mix until well blended. Add vanilla extract just until well blended.
Your homemade marshmallow fluff/cream is now ready to use in your recipes. Use immediately, or refrigerate in a covered container for up to 2 weeks. (mine did not last this long)
Makes a large quantity.

I do not know why I was so surprised that this worked. I did get a good laugh when my children came in and were so shocked marshmallow fluff could be homemade, "it really looks like marshmallow fluff". Now the true test would come in the making of the fudge. I have used this recipe since I was 8 years old. Don't sweat the small stuff it was just fine. It is an amazing thing that one can search for the instructions, on how to do just about anything, and someone has posted it somewhere. This recipe came from whatscookingamerica.net

Yum!!! I need to begin to figure out what I can make myself in those moments now that our little store is closing! There is actually someone interested in purchasing it... we are praying that it all comes together and really happens!
